The Bivouac, pronounced “biv∙ou∙ac,” refers to a temporary, minimalist shelter used by outdoor enthusiasts and soldiers. For those truly immersing themselves in nature, when you can't carry a lot, you want the best. HIRSCH The Bivouac honours those adventurous spirits brave enough to take the road less travelled.

Hirsch The Bivouac is a batched product that the brand says will be composed of approximately 160 barrels per batch. Unlike Hirsch The Horizon, which is the company’s other batched bourbon and is a blend of bourbons distilled in Indiana, Hirsch The Bivouac combines two Kentucky bourbons. The company states that “The Bivouac, pronounced ‘be∙voo∙ak,’ refers to a temporary camp without a tent or cover. It alludes to a way of travel only meant for those who want to truly immerse themselves in nature. HIRSCH The Bivouac honors those adventurous spirits who are brave enough to take the road less traveled.”

While Hirsch the Bivouac and Hirsch The Horizon don’t share the same mashbill makeup, they do share one thing in common. Both deliver a straightforward sip

Blend of two mashbills: 

90% - 4 Yrs 8 Mo: 74% Corn | 18% Rye | 8% Barley Malt

10% - 6 Yrs: 72% Corn | 13% Rye | 15% Barley Malt

The program being offered by Hirsch remains one of the most exciting in Kentucky today. These are famous stocks that no one is supposed to talk about. Produced at an unnamed Bardstown distillery from their famous mashbill – 76% corn, 13% rye, & 15% malted barley. Those whiskies were rebarreled and aged for a further period at Bardstown Bourbon Company. Selected by our spirits team in early Spring of 2025 and bottled at cask strength. These are still inaurguably some of the most sought-after stocks in the industry – so much so that the exact same mashbill bottled by the distillery at the very same aged, easily commands 2-3 times the price at retail. Here, we’re more interested in getting our customers this special bourbon at an incredible price. These maybe the final stocks to ever be released of these special lots of whisky. This barrel was distilled on January 11th, 2018 and bottled in late June of 2025, making it 7.5 years old. At a barrel strength of 112.2 proof, you’ll not find a better Bardstown distilled bourbon on the market for less.
