An omakase at Sushi UEHARA, paired with six makgeolli from Jiranjigyo — including No.3, the brewery's collaboration with Chef Koji of Sushi Koji, and one new bottling debuting for the first time at this dinner.
Sushi UEHARA has operated in Hong Kong for over 11 years, run by a Japanese chef known for his palate for both sushi and alcohol. The omakase counter is a regular gathering point for Hong Kong's Japanese community.
Jiranjigyo is one of Korea's most respected artisan makgeolli breweries, based in Sunchang, Korea.
The brewery is surrounded by fig orchards, and cultures its nuruk — the traditional fermentation starter — among the fig trees. The result is a makgeolli with distinctive fig and coconut notes, balanced by a clean acidity.
Jiranjigyo is poured at Michelin-starred restaurants across Asia.
